Respect for produce and its environment is the founding commitment of Château du Bost. This responsibility cannot simply be declared: it is lived day to day, in every choice, every gesture, every relationship built with those who grow, raise and harvest.
It is expressed first in the attention we pay to living things, to the seasons, to the terroir, to the natural rhythms that dictate what the land offers us. Working with nature means accepting its constraints and turning them into a source of creativity. It means letting the calendar of the seasons guide the menu, rather than imposing the demands of a fixed offer on nature.
It is expressed too in the choice of our partners. We favour local producers, committed as we are to sustainable or organic farming, whose operations are rooted in our region and share our values of rigour and respect.
From the selection of raw ingredients to the final touch on the plate, the cuisine of Château du Bost is as much an ethical gesture as an artistic one. A deep conviction that the most demanding gastronomy is also the kind that takes care of the produce, the producer, and the planet that sustains them.
The Clorofil eco-responsible tool
The first carbon footprint calculator dedicated to the hospitality and restaurant industry, used to measure, track and reduce our greenhouse gas emissions.
This approach lets us identify concrete areas for improvement and set measurable reduction targets.
When it comes to sourcing, we have made a deliberate choice to stay local: more than 80% of our suppliers are located within a 70 km radius of our establishment. This local anchoring helps us reduce the carbon footprint linked to transporting goods, support our region's economy and build lasting relationships with partners who share our values.
Every day, we look to go even further. Each day brings the opportunity to identify new ways to reduce our impact: optimising energy consumption, limiting waste, improving our sorting and recycling practices, or reducing packaging.
This continuous improvement approach relies on the involvement of our whole team, who are convinced that small gestures, added together, make a real difference.
